Tis the Season...

Of Lights and Chocolate Guilt... I mean Gelt =)


Before you have even finished your Thanksgiving leftovers and in less time than it takes to spin a driedle  Hannukah is here. This was my favorite Holiday growing up, not so much because of gifts, but because of latkes. Oh those crispy patties of potatoey goodness can turn any frown upside down. BUT, not any recipe or texture will do. The latke that takes the cake... pancake really, is my Grandma's. One of the best parts to the recipe... is it's not exact and you can't mess it up! I also love the texture, a bit smooth, a little chunky and not at all shredded like those "wanna be potato pancakes". Here it is... I hope you enjoy them as much as I do!

Potato Latkes                                                                                                                  
9 Idaho Potatoes, peeled and cut into 1/4s
3 Medium Onions, peeled and cut in 1/2
3 Eggs
1 c Matzah Meal

1- In a blender, put 3 cut potatoes, 1 cut onion and 1 egg. Blend until the texture of crushed ice. Place in a bowl.

2- Repeat until all the potatoes are processed.

3- Add Matzah Meal.

4- In a large pan, heat vegetable oil (1 inch deep)

5- Fry 1/4c scoops of the potato mixture. Flip when brown.

6- Drain excess oil on paper towel

7- ENJOY!

    Wondering if you had any suggestion for a gluten-free substitute for the matzah? Would GF breadcrumbs work or would GF flour work better?

  2. GF bread crumbs would be better... a little lighter finished product. Another option is to use home made bread crumbs... like a panko texture. I hope you enjoy!
